Lemongrass, Mint and Basil Roasted Broccoli

  • Preheat oven to 425 degrees.
  • In a small pan, mixed together the avocado oil, sesame oil and half the lemongrass. Cook over low heat for 5-10 minutes.
  • In a large bowl, mix the broccoli with the oil combination and rest of the lemongrass. Spread on a sheet pan and cook in the oven for 10-15 minutes until the broccoli is crisp.
  • Sprinkle mint over the broccoli and return to the oven for 2-3 minutes.
  • Remove from the oven and sprinkle with basil, sesame seeds and coconut aminos.
