Step 1
Preheat oven to 400 degrees.
Step 2
Cut vegetables and put in a large mixing bowl.
Step 3
Add olive oil, garlic and salt and pepper to bowl and mix with vegetables until coated evenly.
Step 4
Pour vegetables out evenly on a baking sheet. Roast in the oven for 20-25 minutes or until tender.
Step 5
Remove from oven and drizzle with balsamic vinegar.
