  • Preheat oven to 400 degrees.
  • Cut vegetables and put in a large mixing bowl.
  • Add olive oil, garlic and salt and pepper to bowl and mix with vegetables until coated evenly.
  • Pour vegetables out evenly on a baking sheet. Roast in the oven for 20-25 minutes or until tender.
  • Remove from oven and drizzle with balsamic vinegar.
