  • Preheat oven to 400 degrees.
  • In a large bowl, combine everything except the enchilada sauce and mix together.
  • Spray muffin tin with non-stick spray and divide mixture evenly.
  • Bake for 15-20 minutes or until beef is brown.
  • Remove from the oven and add a Tbsp of enchilada sauce on top of each muffin.
  • Return to oven and back an additional 3- 5 minutes.
