Step 1
Preheat oven to 400 degrees.
Step 2
In a large bowl, combine everything except the enchilada sauce and mix together.
Step 3
Spray muffin tin with non-stick spray and divide mixture evenly.
Step 4
Bake for 15-20 minutes or until beef is brown.
Step 5
Remove from the oven and add a Tbsp of enchilada sauce on top of each muffin.
Step 6
Return to oven and back an additional 3- 5 minutes.
